The Best Spinach Artichoke Dip

It is almost that time of year again, tailgate time! With plans being made to kick off Gordo’s Ultimate Tailgater Contest, we are working on the best of the best tailgate foods! But this also just means finding the best foods for everyday! Now this one isn’t anything shocking or extreme (not like when we put cheese dip in a cake) but it is one of the greatest dips you can make. So here we go, Gordo’s take on spinach artichoke dip!
Spinach Artichoke Dip for Everyday!
This recipe is one of the easiest crowd pleasers you can make for a group (even your kids for an after school snack)! There are a lot of different variations of this recipe floating around on Pinterest and other sites so feel free to take your own variation of this dip. I am not one for following recipes to a tee and always add my own twist on things! It’s always fun to try new things with food even with a simple recipe. I had the original recipe from our site which included cream cheese, mayo, and Gordo’s Cheese Dip. That seemed like a lot of creams for one dish so I took the mayo out of the recipe and added a little bit of garlic for more flavor.
Spinach artichoke dip is one of my personal favorites to make with Gordo’s Cheese Dip because it makes the dip extra creamy and cheesy. And I know obviously I would like anything with Gordo’s in it because here I am writing all I know about cheese dip. But for real, its so much better than normal. I could literally sit and eat this whole thing by myself…yeah, no shame here. But if you aren’t me and are making it to share because you’re a nice person, make sure you have the right things for dipping! My favorites for this recipe are bagel chips, corn chips, and crackers but some other great dippers are tortilla chips and veggies.
While this recipe is great for tailgating, I think it is better for couch-gating (yes, that is totally a thing). The issue I face with this one on a tailgate is keeping it warm. It most likely won’t last long enough to have an issue with staying warm because your guests will devour it but still. There are great ways to keep food warm at a tailgate though! Check out Southern Living’s ideas for how to heat up your tailgate! But hey tailgating and couch-gating isn’t just for football! We are ready to kick off our Olympics tailgate tomorrow!
Cheesy Spinach Artichoke Dip!
- 1 16 oz. bag frozen chopped spinach
- 1 can artichoke hearts (drained)
- 1 8 oz. package cream cheese
- 1 1/2 cups fresh grated Parmesan cheese
- 1 clove minced garlic
- 1 16 oz tub Original Gordo’s cheese dip
Cook spinach in microwave for 5 minutes. Drain and squeeze out any excess moisture. In separate bowl, microwave cheese dip and cream cheese for 2 minutes until melted. Chop drained artichoke hearts. Mix all ingredients in large bowl. Pour into greased 8 x 8 oven-safe dish. Bake at 350 degrees for 30 minutes or until hot and bubbly throughout. Top with parmesan cheese. Serve with crackers, chips, or fresh vegetables.
