Here is a recipe that has been floating around our website and social media for ages but I have never had to pleasure to try myself (and honestly I was a little worried about this one). A pound cake made with Gordo’s Cheese Dip. Yeah, you can imagine my curiosity about this one. I have put cheese dip in some interesting recipes but never a cake.
So as we entered the heart of summer time light and fresh ingredients, I figured a pound cake is always good paired with fresh fruits and a dollop of whipped cream. Now this would be the first pound cake I had ever attempted, jumping right off the deep end and trying to make it with cheese dip was really something.
Okay, so here it is the secret of Gordo’s Cheese Dip. You can put this stuff on anything. I have always said this and believed it but after making a pound cake, I am now 100% sure I can put this stuff in and on anything. Anything. It actually blows my mind how many uses there are for a cheese dip. Okay, anyways, uses of cheese dip rant over back to this cake.
Making this cake is super easy. I mean literally so easy. And it makes a ton of cake….or a pound, I suppose. I got to try one part of the cake plain and the other part with some white chocolate chips. Plain was much better in my opinion. But that’s is just a personal opinion. I shared this cake with some friends and there were mixed reviews. A few said it tasted more like a cheese cake with the texture of a normal cake. I am certain that if you microwave this cake it gets a little iffy. The cheese dip does not hold to the cake so it runs a little when reheated. I didn’t find this to be an issue personally, but it could be if you need it warmed for a dish. I also found if you don’t tell people it is a cheese dip cake then they don’t notice but if you tell them then suddenly they can taste it. It’s an interesting thing.

- 1 tub Gordo’s original cheese dip
- 3 sticks butter or margarine – softened to room temperature
- 3 cups sugar
- 6 eggs
- 3 cups self-rising flour
- 1 teaspoon vanilla
Melt cheese dip and add to softened butter. Cream together with sugar and vanilla until light and fluffy. Add eggs, one at a time until thoroughly mixed. Slowly add flour and mix until all is incorporated. Pour into a greased Bundt or tube pan and bake at 325 degrees for 1 hour. Let cake cool in pan for 10 minutes before turning out on serving plate.
